The age-old dilemma: order a glass of wine you're not sure about, or splurge on a bottle of something you love? At Clement at The Peninsula, you needn't worry your pretty head; all of the restaurant's wines are now available by the glass. For instance, wine director Jared Fischer is happy to pour single servings of 2005 Cristal ($95) or 2002 Chateau d’Yquem ($1,000). He utilizes The Coravin System—wherein a hollow needle pierces the cork to draw out the wine with as little oxygen exposure as possible—to open bottles without uncorking them.
