100+ By-the-Glass Lists Comes to San Francisco

When wine- and cheese-focused restaurant Artisanal opened in New York City 14 years ago, it featured a staggering 100 wines by-the-glass. There were old, oxidized orange wines on the list along with esoteric Swiss and Austrian selections. Keeping track of, and educating customers on, this whole new slew of flavors was one of the challenges, along with keeping the bottles’ contents fresh.
