Tom's initial thoughts of using the Coravin were akin to those of restaurants in Manhattan like Del Posto - serving rare, high quality wines by the glass. However, after using the Coravin in the restaurant for about four months now, the idea has changed somewhat. The restaurant does offer rare and hard to find wines by the glass or taste, but not just the elite in terms of cost. Numerous wines that are higher than the typical price point for glass service are now available to Ristorante Lombardo's customers thanks to the Coravin. The use of the Coravin allows Ristorante Lombardo to offer the same variety of glass selections to customers in Buffalo as well-known restaurants and bars in places like New York City and San Francisco offer to their customers.
