New wine bar seeks to linger on Rutland’s palate

Sawyer bought a device called a Coravin, a needle-like tool that pierces the wrapping and cork of a wine bottle without actually opening it.
“Oxygen is wine’s worst enemy,” Sawyer explained. “This doesn’t allow oxygen into the wine. So basically you can pour yourself a glass of wine without having to drink the whole bottle because you’re worried it will go bad in a few days.”
This will give customers the flexibility to try really expensive wine without paying for the bottle, he said.
